Bread and Butter Pickles Recipe...

Pop, pop, pop...

It's the sound of jars sealing on the kitchen counter!


The cucumbers are growing fast this year, and today I made my second batch of pickles.  I used to make a lot of pickles using the packets of pickling mix, but last year found this recipe for "from scratch" Bread and Butter pickles.   They've  become one of our favorites and are super easy to make!

I've had only one casualty so far...a jar broke in the canner in my first batch.  That was a mess, but we have 11 pints so far, and the way the cucumbers are looking we'll have a lot more.  I need some more recipes...

OLD FASHIONED BREAD AND BUTTER PICKLES
slice thinly:
1 gal. cucumbers
2 large onions

Stir to dissolve, and pour over sliced cucumber mixture.  Cover with heavy plate to hold down under water.  Let stand 3 hours.  Drain thoroughly and pack in jars:
 1/2 cup salt
Ice water to cover

Mix together in saucepan.  Heat to boiling and fill jars, leaving 1 inch headspace:
8 cups vinegar
4 cups sugar
4 tsp mustard seed
1 tsp celery seed
1 tsp tumeric
--------------------------------------------------------------


Process in boiling water bath for 10 minutes

One thing I like about this recipe is, that if I don't have enough pickles to use up all the "juice"that the recipe makes, I can just store it in the fridge for a few days and reheat it to do the next batch.

Give it a try...it's easy, and the pickles are delicious!

    There's nothing like the symphony of canning jars sealing!!! I love that sound!!

    My mom used to make batches and batches of bread and butter pickles.
    Feeding a family of 8, they were always appreciated in the dead of winter :)

    I've not made pickles ....yet.
    I want to try to make some dills this year, and I'm trying a recipe that another blogger posted---Ocean Breezes and Country Sneezes (0n my sidebar).
    I'll let you know how they turn out.

  4. Bread and Butter Pickles are my favorite. I love them on hot dogs....crazy.
    Eric's mom always made several jars and we would be gifted 2-3 jars each year. Wish I had planted some pickle cukes.

  6. So glad you posted this I really do need to make pickles for myself. You know I told you I always order them from PA. It would seem like such an accomplishment to make them like you and like my grandmama always did...Have a great weekend.

  7. Don't you just love standing in the kitchen and listening to that magic pop? It makes me so happy.
    You know I have a recipe for squash relish almost just like this one. It was from my aunt who passed away now. She would make the relish and sell it from her front porch for 5 dollars a jar.
    She was such a funny lady. People would show up in the morning to buy produce from her garden.
    In the afternoons she canned and made jam to sell the next morning. That was what she did for fun. :)

    One of my favorites is my MIL's recipe for sweet mustard pickles,its like a chunky relish texture,they are fantastic!

  12. Bread and butter pickles are one of my favorites and I also like to use yellow squash and zucchini in place of the cucumbers in the same brine, just omit the 3-hour brining step. The sound of jar lids popping on the kitchen counter is a beautiful symphony! My mom always used to count the pings! :)

  16. I'm trying this out this week, This is my mustard pickle... It's a thick mustard relish I like to have with corned beef and cabbage. (You can substitute green tomatos for the cucumbers and it tastes the same.
